Today, I used a very basic mac and cheese recipe to make dinner. I substituted the cheddar and Velveta with Montery Jack and Habanero cheddar. I also added green onions and garlic. I'm pretty pleased with the result:

The Acorn Squash is Stuffed...
It's been awhile...a long while but I wanted to share my latest kitchen triumph. I currently have no stove and I'm approaching a season of baking...what to do? Well, I have a toaster with a convection oven setting, I can make this work. I used a recipe for Vegan Stuffed Acorn Squash I found at OAMM. All was going well until I discovered something gross living in my box of Quinoa and had to chuck it into the garbage. I ended up using rice instead. Also, I did not use the meat substitute suggested, I had leftover from our lentil tacos the other day and used that and some sauteed mushrooms and onions. Enough talk, here are some pics:
This meal was much easier to cook than I thought it'd be, even with all the challenges (no quinoa, no oven). If you're looking for a satisfying and healthy autumnul meal this is a good bet!
